Sawyer's Butcher & Delicatessen is chef Chris Wilcox's whole-animal butcher shop and counter-service deli at 10 Cotton Street in Portland's Old Port, in the former Thistle & Grouse space. Wilcox, who previously owned and operated Judy Gibson in South Portland and was chef de cuisine at Eventide, sources pasture-raised, hormone- and antibiotic-free beef, pork, lamb, and chicken directly from small Maine farms, and butchers whole animals in-house. The counter-service sandwich program runs on house-made cold cuts, sausages, and charcuterie, alongside prepared foods, condiments, and dog treats. The shop is built around zero-waste practice, rendering fat, making stocks from bones, and turning lesser cuts into pet food. Open Wednesday–Saturday 11am–6pm, Sunday 10am–4pm.
